It is governed by an appellation regulated by the Ministry of Agriculture, which requires that the hives be installed at altitude (more than 1000 meters) and that the extraction of honey is also carried out in mountain areas, in a fixed workshop. The production of this mountain honey from Auvergne is therefore very artisanal. Honey is a natural product whose texture can change over time. Albert Ménès selected a honey from France whose production is artisanal. This spring honey, very light and bright in color, has a supple texture, a suave and discreet fragrance and a subtle and sweet taste, reminiscent of that of locust blossom.
