While the variety in Sicily is mainly used for the production of olive oils, in Calabria it is mainly used for the production of essolives. We deliberately chose the most traditional method. This has even resulted in an Italy-wide “food tourism” for decades. Sometimes whole coaches go to Tropea with housewives, who buy the annual supply of sweet onions there.
