Ricotte fresche “Monte Cusna” (Fresh Ricotta) are still produced today using the artisanal method of natural outcropping.
They come in soft, fresh and light flakes. Available in both pure sheep’s and mixed sheep’s milk; you can find it on the cheese counter in large sizes or on self-service counters in 300g packs.
The perfect ingredient for typical regional dishes such as tortelli or crespelle, and also consumed as a light and tasty second course.
