ANCIENT GRAINS Grani Antichi is a stone-ground type "2" soft wheat flour obtained from a mixture of varieties of ancient national grains: Verna, Autonomia, Abbondanza and Frassineto. It has much lower rheological characteristics than other flours and has a lower protein content. It adapts to all types of processing and is particularly suitable for doughs that require medium-short leavening or a very slow and extremely accurate processing process. It is advisable to use a little beer yeast and not too long fermentations.
