All the ingredients that you already know, but in a mix that favors the vegetables content. Taste and lightness to love oneself without sacrificing the pleasure of the good table. Keeping unchanged the practicality much appreciated in these hectic times. Preparation You do not have to do anything: just defrost it and season to taste. You can pass the salad from the freezer to the fridge and leave it there for about 8-10 hours, practically in the evening for the following morning or in the morning if you want to eat it for dinner. At room temperature the thawing time will be about 3,5 hours. You can also use the microwave oven in defrost mode for 10 minutes stirring occasionally….(just remember to adjust the time to quantities and oven wattage). For sure quinoa is rather exotic when it comes to regional specialities, but we are confident it will soon become a familiar presence on your tables as are gnocchi or pasta. Quinoa is a grain crop originated in the Andean region of South America where it is grown at high altitudes. It’s an ancient plant already known to the Incas, that made flour from its seeds. It is rich in minerals (iron, magnesium, phosphorus) and a source of vegetable proteins. Our salad is made with three types of quinoa (white, red and black), grilled aubergines, chickpeas and grilled yellow and red peppers, all rounded by a pesto of black olives, almonds, chili and extra virgin olive oil. If you prefer it warm you can cut a couple of nicks on the front of the tray and pass it in the microwave for 3 minutes at 450W. If you wish you can also add a little extra virgin olive oil. /IMAGE 5- Cous cous Tasty veggie cous cous with grilled vegetables, carrot, peas and chickpeas. Great alone or as a base for your recipes. From the Mediterranean tradition rooted also in Italy since the Arab rule in Sicily, we got the inspiration for our vegetarian version of cous cous with chickpeas, grilled peppers, peas, pre-fried eggplantS, courgetteS and carrotS, enriched with savory spices. Preparation In the microwave(800W): pour the vegetable cous cous still frozen and a tablespoon of water in a microwave suitable container for about 3,5 minutes. stove top: Pour a tablespoon of oil In a large no-stick pan, add four tablespoons of water and the frozen cous cous. Cook covered on medium/high heat for about 5 minutes. Than remove the lid and cook for another 3 minutes, stirring occasionally. / IMAGE 6- Riced cauliflower A low-carb alternative to grains We all love grain-based meals like risotti or couscous, but we are ingreasingly aware that reducing the carbs intake is an healthy choice. Finely ground cauliflower is a good and versatile alternative that you can pair with other vegetables, or with your favourite source of proteins, or with a sauce of your choice. Preparation Empty the frozen riced cauliflower in a non-stick pan and cook it on a medium flame until it is heated through and any water has cooked off. Alternatively, do the same in a microwave oven. Then season at will.
