“Briam” stands for mixed vegetables and potatoes, originally cooked in beehive ovens throughout Greece, during the early summer, when vegetables are at their best, herbs are plenty and meals have to be light and refreshing under the Mediterranean sun. It is exactly this combination that Palirria turned into a vegetarian dish, mild in taste, full in aromas, healthy as much as filling -the closest thing to Nature’s idea of gourmet.
